Origin

Deep in the volcanic highlands of Indonesia's largest island, Sumatra, coffee that is unlike anything else in the world. Grown across the mist-laden plateaus of Aceh and the Mandheling and Lintong regions, Sumatran coffee owes its singular character to a processing method found nowhere else on earth — wet-hulling, known locally as Giling Basah. Beans are hulled while still retaining high moisture content, then finished drying on raised beds or patios, a technique that imparts a deep, earthy complexity that has made Sumatra one of the most sought-after origins in specialty coffee. Smallholder farmers, many working plots of less than two hectares, form the foundation of an industry built on centuries of cultivation tradition.

Character

Sumatra is not a coffee for the timid. It is full-bodied, bold, and unmistakably itself — a cup that leads with dark, brooding depth and finishes with an earthy, herbaceous resonance that lingers long after the last sip. The wet-hull process produces a characteristic low acidity and a dense, syrupy mouthfeel that sets Sumatran coffee apart from the brighter profiles of East Africa or the clean sweetness of Central America. Cedar, dark chocolate, and roasted earth anchor the cup, with subtle notes of tobacco, dried fruit, and sometimes a whisper of black pepper emerging as the coffee cools.

The variability between sub-regions adds to Sumatra's intrigue. Aceh Gayo lots tend toward a cleaner, fruitier expression; Mandheling is earthier and more intense; Lintong sits somewhere between — refined, complex, and consistently satisfying.
