Origin
Nicaragua is Central America's quiet achiever — a country whose coffee industry has weathered decades of political upheaval, natural disaster, and economic hardship to emerge as one of the region's most compelling specialty origins. Grown in the cloud-draped highlands of Jinotega and Matagalpa, Nicaragua's coffee belt sits at the northern end of the country, where volcanic soils, consistent rainfall, and cooling mountain elevations create ideal growing conditions. The region's smallholder farmers, many organized into cooperatives, have increasingly embraced sustainable and organic practices, driven both by necessity and by a genuine commitment to the land they cultivate.
Jinotega, known as the "City of Mists," produces the lion's share of Nicaragua's finest lots. The perpetual cloud cover that gives the region its name also provides natural shade for the coffee trees, slowing fruit development and deepening complexity in the final cup. Matagalpa, slightly lower in elevation, contributes body and sweetness. Together, they form the backbone of an origin that continues to earn growing respect among specialty roasters worldwide.

Nicaraguan coffee offers a profile that is immediately approachable and deeply satisfying — smooth, balanced, and naturally sweet, with none of the sharp edges that can characterize higher-altitude East African origins. The cup opens with warm notes of milk chocolate and toasted hazelnut, building into a gentle caramel sweetness that carries through to a clean, lingering finish. Washed lots emphasize clarity and brightness, with a crisp apple-like acidity; natural-processed beans develop a fuller body and richer fruit character, leaning toward dried cherry and cocoa.
