Origin

Mexico is a coffee origin that rewards those willing to look past its modest reputation. The highland state of Chiapas, bordering Guatemala in the south, sits at the heart of the country's specialty coffee production — a rugged, mountainous landscape of volcanic soils, dense cloud forest, and cool highland temperatures that create growing conditions capable of producing arabica of genuine complexity and distinction. Oaxaca and Veracruz contribute their own regional voices, rounding out a national profile that is far more diverse than its place in the specialty coffee conversation would suggest.

The majority of Mexican coffee is grown by indigenous smallholder farmers and ejido cooperatives — communal farming organizations with roots that run deep into the country's agricultural and cultural history. Many of these communities have embraced organic certification, reflecting both long-standing traditions of working in harmony with the natural environment and a practical response to the economic realities of smallholder farming. The result is a significant volume of certified organic coffee that carries genuine traceability and environmental integrity.

Alma de Chiapas is an umbrella cooperative for certifications as Fair Trade for groups of farmers. Alma de Chiapas is an incubator to strengthen these groups in business, finance, and quality management, and graduate them to become a direct, independent member of Impacto Transformador. Alma de Chiapas is made up of 599 farmers (490 men and 109 women) and cultivates 1654 hectares of land.

Character

Mexican coffee is defined by warmth, quiet depth, and approachable sweetness — a profile built for the drinker who values comfort and balance over intensity and drama. The cup opens with dark chocolate and roasted walnut, building into a gentle brown sugar sweetness that carries through to a clean, cedar-tinged finish. Mild citrus notes provide just enough brightness to keep the profile lively without sharpening into the assertive acidity that characterizes higher-altitude East African origins.

Washed processing — standard across Mexico's quality-focused growing regions — keeps the cup clean and transparent, allowing the terroir of the highlands to express itself directly.
