Origin

In the lush highlands of central Honduras, where mist-covered mountains rise above cool valleys and volcanic soil runs deep, lies Cerro Azul — a region whose growing conditions are as close to ideal as Central American coffee gets. At elevations between 1,200 and 1,600 meters, the combination of cool temperatures, steady rainfall, and frequent cloud cover slows the maturation of coffee cherries dramatically, allowing natural sugars to develop with patience and layered complexity. The rich volcanic soils add mineral structure to every cup, and the defined wet and dry seasons ensure the consistency that specialty buyers depend on. Coffee has been woven into the fabric of this community for generations — not merely as a crop, but as a cultural identity and a source of enduring pride for the families who farm these hillsides.

This coffee is produced by COHORSIL (Cooperativa Hormiguitas de Siguatepeque Limitada) — a cooperative of smallholder farmers united by a shared commitment to quality, sustainability, and community. COHORSIL provides its members with technical training, agronomic assistance, and shared processing facilities, giving small producers access to resources and expertise that would be out of reach individually. The cooperative's investment extends beyond the farm: education programs and active reforestation initiatives reinforce the role of coffee as a force for long-term community growth, ensuring that the land and the people who depend on it thrive together for generations to come.


Character

Cerro Azul coffee is defined by approachable sweetness, clean structure, and a satisfying depth that rewards every brewing method. The cup opens with a bright apple note — crisp and clean — before settling into the rich warmth of dark chocolate and a rounded nuttiness that carries through a smooth, balanced finish. Medium acidity lifts the profile without dominating it, and the medium body feels honest and full — substantial enough to stand up to milk, delicate enough to shine as a pour-over.

The washed and sun-dried process preserves the natural clarity of the Cerro Azul terroir, allowing the Typica, Bourbon, and Catuaí varieties to express themselves without interference.
