Origin
In the shadow of Poás Volcano, northwest of San José in the Central Valley, lies Alajuela — one of Costa Rica's most productive and quietly celebrated coffee-growing provinces. The slopes of Poás rise through dense cloud forest, blanketed in rich, mineral-laden volcanic soil that has sustained smallholder coffee farming for generations. At altitudes between 1,200 and 1,500 meters, the region benefits from a well-defined wet and dry season, consistent rainfall of over 2,500 millimeters annually, and cool highland temperatures that slow cherry development and concentrate natural sugars in the bean. The result is a coffee of exceptional sweetness, clean structure, and genuine character.
Alajuela sits at the heart of Costa Rica's micro-mill revolution — and few regions have embraced it more fully. Farms like Las Lajas, run by the Chacón family in Sabanilla de Alajuela, were among the first in Central America to process their own coffee on-site, pioneering the honey and natural processing methods that have since transformed specialty coffee across the country. Inspired in part by a 2008 earthquake that cut off water access to their mill, the Chacóns began experimenting with low-water processing — and in doing so, helped define an entirely new category of Central American coffee.
