Sumatra: The Dark Soul of the Highlands

Origin Story · Southeast Asia · Indonesia
Volcanic soil, ancient forest, and a processing method unlike anywhere else on earth.
1,500m Above Sea Level
Few coffees in the world inspire the kind of devotion — or division — that Sumatra does. Dense, brooding, and deeply complex, it is a cup that does not try to please everyone. For those who seek it out, Sumatra is less a flavour and more a place.
A Landscape Unlike Any Other
Running down the western spine of the island, the Bukit Barisan mountain range creates one of the most dramatic coffee-growing landscapes on the planet. Coffee here is cultivated at altitudes ranging from 1,400 to over 1,800 metres above sea level. Around 90% is grown by smallholder farmers, with women playing a central role at every stage.
The Key Growing Regions
The Flavour of Sumatra
Sumatra coffee is bold and earthy with low acidity, carrying notes of dark chocolate, cedar, and moss, alongside spicy undertones of cinnamon, nutmeg, and licorice.
Sumatran coffee is a dark and brooding cup that attracts those who have been seeking specialty coffee for years — it has a character entirely its own.
Giling Basah — The Wet-Hull Secret
Giling Basah (wet hulling) is Sumatra's defining technique: cherries are pulped, briefly fermented, and then hulled while still retaining high moisture. The result is a swollen, blue-green bean that dries quickly and takes on the dense, low-acid body that defines the Sumatran cup.
This method, essentially unique to Indonesia, dramatically enhances body and mouthfeel — producing the full, almost syrupy weight that has made Sumatran coffee a cornerstone of dark-roast blending worldwide.
Why Sumatra Endures
Sumatra stands apart in a specialty coffee world that often prizes brightness and delicacy. The Bukit Barisan mountains, the volcanic soil, and the ancient rhythm of wet-hull processing leave their unmistakable mark on the cup. To drink a well-sourced Sumatran coffee is to taste the forest itself — dark, alive, and impossible to forget.
